So, quite a few years ago, I tried Martha Stewart’s Blueberry Buckle recipe, and I was so disappointed since it was a total flop. My husband being the cynic, wrote his mom and got her recipe, and on the piece of paper, he titled it Margaret’s Better than Martha’s Blueberry Buckle! I, of course, chuckled, but he was right.

What I love most about this recipe because it’s simple to make (like my amazing cornbread recipe) and so tasty. The crunchy crumb topping and the sweet icing mixed with the moist yummy blueberries.

Well, the other day, while I was cruising around on Pinterest, I found the original recipe. You see, someone photocopied it from what looks like a 1950’s magazine page. So, maybe this is the source of where my mother-in-law first got this recipe.

Have I mentioned that Margaret is quite the baker? She lives in Vermont, so she has dishes with a New England flair. I had not heard of a buckle until I met my husband.

A buckle is when the streusel topping on this moist blueberry cake makes the top look buckled.

Where Did it Originate?

After reading about it, I’m so impressed with the history of this dessert. It started with the early colonists and their roots in England. They made pies and cobblers, which I believe were the offspring of their steam puddings. They loved the local fruit and thus came about the cobblers, grunts, buckles, and pandowdy.

This is the Best Blueberry Buckle Cake Recipe. It's better than Martha Stewart's buckle recipe. Serve it as a dessert or as a morning blueberry coffee cake.

Ingredients

Blueberry Buckle Batter

  • ¾ cup sugar
  • ¼ cup Crisco
  • 1 egg whisked
  • ½ cup milk
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups fresh blueberries

Crumb Mixture

  • ½ cup sugar
  • cup flour sifted
  • ½ tsp cinnamon
  • ¼ cup unsalted butter room temperature

Icing

  • 3/4 cup powdered sugar
  • 1 ½ tbsp milk
  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 375° Fahrenheit.

  • Grease a 8"x8" pan.

Crumble

  • In a bowl, combine sugar, flour, cinnamon, and butter.

  • Mix with fingers until you have a sugar crumble. Set aside.

Blueberry Batter

  • Cream together sugar, shortening, and egg.

  • In a separate bowl, mix flour, baking powder, and salt. Stir into the sugar mixture, alternating with the milk.

  • Fold fresh blueberries into the batter.

  • Pour cake batter into the greased pan.

  • Sprinkle the crumble evenly over the buckle.

  • Bake at 375° for 25-35 minutes, or until a toothpick comes out clean when inserted in the cake.

  • Cool the cake on a rack before icing.

Icing

  • Mix powdered sugar, milk, and vanilla extract in a bowl until smooth.

  • Drizzle over the cooled buckle and cut and serve.

What is the Difference Between a Buckle and Coffee Cake?

The basic dough is similar to a coffee cake, and so is the sweet crumble. But the addition of the sweet fresh blueberries makes the difference between it and a coffee cake. But, the buckle can be a nice substitute for coffee cake, in my humble opinion.
